When using cocoa powder and sugar together in a recipe, a trick I learned a long time ago is to whisk the cocoa powder together with the sugar.

Peppermint Ice Cream Recipes

Once the cocoa powder and sugar have been smoothly combined add the cream and milk, and warm through. Keep whisking so the sugar and cocoa powder can dissolve.

Add the vanilla and peppermint extracts when you remove the cocoa milk mixture from the heat. Let the mixture cool to room temperature before pouring it into the ice cream maker.

Peppermint Mocha Ice Cream Recipe

Ingredients 

  • heavy cream
  • whole milk
  • sugar
  • cocoa powder
  • kosher salt
  • vanilla extract
  • peppermint extract

Instructions

  1. Combine the cream, milk, sugar, cocoa powder, and salt in a small saucepan. Warm the mixture over medium heat, whisking frequently, just until the sugar and the cocoa dissolve. Remove from the heat and add the vanilla and peppermint extracts. Stir to combine and cool to room temperature.
  2. When ready to churn, whisk the mixture again, and pour the mixture into the ice cream maker. Churn according to the manufacturer’s instructions.
  3. Transfer the finished ice cream to an airtight container and place it in the freezer until ready to serve. Serve with chocolate shavings on top, if desired.
