Easy Lemon Loaf Cake
This delicious lemon loaf cake is full of flavor. You will love the soft, moist consistency. It’s delicious!
Servings: 8 servings
Cake ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 eggs
- Zest from one lemon or about 2 tablespoons of lemon zest
- 1 cup white granulated sugar
- 3/4 cup olive oil
- 2 tablespoons lemon juice
- 1 1/2 teaspoons lemon extract
- 1 cup buttermilk
Drizzle Ingredients:
- 2 tablespoons lemon juice
- 2 tablespoons white granulated sugar
Glaze Ingredients:
- 1/2 cup powdered sugar
- Milk

Whisk together flour, salt, baking powder, and baking soda in a mixing bowl. In another bowl, combine eggs, lemon zest, white sugar, olive oil, lemon juice, lemon extract, and buttermilk using a mixer. Combine with flour and mix with a mixer. Spray a 9 x 5 bread pan and add batter. Bake in a preheated 350-degree oven for 45 to 50 minutes or until center tests done. Before removing from pan while still hot, add drizzle below. Cool for 10 minutes and remove from pan.
