Bananas

All purpose flour

White granulated sugar

Brown sugar

Butter

Eggs

Baking Soda

Sweetened Shredded Coconut

Chopped pecan

  • 2 cups of all purpose flour
  • 1/2 cup of white sugar
  • 1/2 cup of brown sugar
  • 1 stick of butter – melted
  • 2 eggs
  • 1 teaspoon of baking soda
  • 1 cup of sweetened shredded coconut
  • 1/2 cup of chopped pecans
  • 3 bananas mashed
  • 1 teaspoon of coconut extract can use vanilla
  • Preheat oven to 350 degrees. Mix butter, sugar, eggs, and bananas with mixer.

  • Add remaining ingredients except shredded coconut and nuts, mix well.

  • Fold in coconut and nuts. Pour into sprayed loaf pan. You can sprinkle extra nuts and

  • coconut on top.

  • Cook in preheated 350 degree oven for 50-55 minutes.

  • Let cool for 10 minutes before removing from pan.

  • Makes one large loaf of bread.
