Welcome to the weekend, my friends! We’ve had some chilly days lately, but it’s starting to feel like spring is near. Or is that just wishful thinking? The birds are chirping every morning now and it just feels like spring, even though it’s only March. I’m still a little thrown when the warmer Ohio days are followed by snowy mornings. I honestly love it though, every unpredictable moment.
ON THE BLOG this week: With a flavorful chicken broth base and light wisps of egg throughout, Egg Drop Soup is a wonderful, light, and simple soup your whole family will request again and again. The first time I made this soup, my kids went crazy over it and devoured every single sip. They requested it again the very next day for lunch.
Pork, shrimp, and vegetables are folded into a paper-thin lumpia wrapper and then fried to crisp golden perfection in this traditional recipe for Filipino Lumpia. Over 20 years ago, I tasted lumpia for the first time. I fell in love with them at first bite.

Hot tea is a perfect match for steamed milk in the very popular London Fog drink. I’ve enjoyed my tea with a splash of milk for as long as I can remember and this frothy spin takes a simple cup of tea to the next level.
Lastly, I am so excited to tell you about these oh-so-delicious Vegan Chocolate Chip Cookies at last! These chocolate chip cookies have been a hit with every single person who has tried them – regardless of whether they normally eat gluten, dairy, or eggs!
What I’m CRAVING: With a well-established love of all things cinnamon, (see all the variations of my beloved Cinnamon Toast Cake) naturally Lynne’s French Breakfast Puffs caught my eye. Buttery muffins rolled in cinnamon sugar? Yes, please!
My FAVORITE THING this week is this peppermint tea. While I enjoy an occasional cup of tea, I’ve never been a dedicated tea drinker. (See above for the London Fog drink that changed my tea drinking ways a while back.)
This peppermint tea though? Oh, it’s so so good! The only ingredient is peppermint and it’s refreshing whether it’s brewed hot or iced cold. Brace yourselves, as I’m still rather shocked myself, I’ve chosen a mug of peppermint tea over my morning latte several times this week. Who am I?!
What I’m READING: The Betsy-Tacy Treasury by Maud Hart Lovelace. Oh, my heart is so happy with my reading choices lately. These are children’s books, but they will forever have a place in my collection. I’ve been reading through some old favorites over the past week or two and I’ve fallen in love with Betsy all over again.
While I do own copies of all of these books, I downloaded the treasury from the library the other day for easy Kindle reading and was pleasantly surprised to discover forewords written by Judy Blume, Ann M. Martin, and Johanna Hurwitz. It was a fun peek into other authors’ perspectives on the Betsy books and the influence they’ve had on so many lives.
What I’m WATCHING: Lost. The kids and I have made it about halfway through the second season now and it’s been so much fun to watch their jaws continue to drop with each new episode.
