Tater tot breakfast casserole is a dish that comes together so easily and is full of flavor. My family loves potatoes, so of course, we’re huge fans of the tater tot. They are a very versatile ingredient. Great for breakfast, brunch, lunch, or dinner.
TATER TOT BREAKFAST CASSEROLE INGREDIENTS:
- Tater Tots
- Smoked Sausage
- Campbell’s Cheese Soup
- Milk
- Chopped Onion
- Chopped Green Pepper
- Minced Garlic
- Eggs
- Black Pepper
- Sharp Cheddar Cheese
- Colby Jack Cheese
HOW TO SERVE TATER TOT BREAKFAST CASSEROLE:
What’s fabulous about a casserole is you don’t need to prepare a ton of side dishes. This is a savory dish, so you could easily serve a side of fruit or this fruit salad. It would also be wonderful with these whipping cream biscuits or old-fashioned sweet bread. These orange-blueberry muffins would also be great, too!

- I’ve never frozen this dish, but I’m sure it would freeze fine. Just bake the dish and then freeze it.

Tater Tot Breakfast Casserole
This Tater Tot Breakfast Casserole is so simple to prepare and full of flavor. It’s delicious!
Servings: 8 servings
- 1 32 ounce bag of Tater Tots (We use Oreida)
- 1 lb of smoked sausage cut into quarter slices
- 1 10.5 ounce can of Campbells Cheese Soup
- 1 cup of milk
- 1/2 cup of chopped onion
- 1/2 cup of chopped green pepper
- 1 tablespoon of minced garlic
- 8 eggs
- 1/4 th teaspoon of black pepper
- 1 cup of sharp cheddar cheese shredded
- 1 cup of colby jack cheese shredded

Preheat oven to 350 degrees. Spray a 9X13 baking dish and set aside. In a skillet over medium heat, saute onion, green pepper, smoked sausage and minced garlic. Cook until onion and green pepper are soft. Remove from heat. In a large bowl combine tater tots, sausage mixture, both types of cheeses, mix together and pour into baking pan.

In separate bowl whisk together eggs, cheddar soup, milk and black pepper. Once combined pour over tater tot mixture.

Bake on 350 uncovered for 65-75 minutes until eggs are completely cooked.
