Ingredients

  • 1 pound boneless skinless chicken breasts cubed into 1/2 inch pieces
  • 2 tablespoons cooking oil
  • 2 tablespoons sesame oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground ginger
  • 1 1/2 cup frozen peas and carrots
  • 2 tablespoons garlic minced
  • 4 large eggs beaten
  • 1/2 cup green onions chopped
  • 4 cups cooked rice
  • 1/4 cup soy sauce regular or low sodium

Instructions

  • Cube chicken into 1/2 inch pieces.

  • Add cooking oil and sesame oil to a large skillet or wok over medium high heat. Once heated, add in chicken and season with salt, pepper, and ginger. Saute and cook for 5-7 minutes.
