SAUSAGE, GREEN BEANS & POTATOES IN THE CROCK POT
This dish is super easy to make which is one of the reasons why we love it. If you are using fresh garden green beans then you are in for a real treat. I believe that is the best way to make these but sometimes you don’t have them on hand.
Canned green beans work just as well and it’s the low slow cooking that takes these beans to the next level. I feel that you must make Fried Cornbread or Cornbread Muffins to go with this hearty dish.
⭐KEY INGREDIENTS
Smoked Sausage – There are many different types of smoked sausage you can use what you prefer.
Green Beans – We love garden fresh green beans of any kind, there are MANY different variations and all will work in this recipe. You can use fresh, frozen, or canned.
Beef Broth – This adds a good flavor to this recipe, and it gives a great flavor to the potatoes
Potatoes – You can use russet, red, or any potatoes you like. It’s your choice to peel them or not. They will work either way.
Bacon Drippings – This ONE ingredient does add a lot of flavor, and we love it.
🔪SWAPS
You can use andouille sausage for more spice or turkey sausage for less fat and more protein. You can also leave the sausage out and enjoy the beans made without it. This is one of our most popular recipes and it’s just Green Beans and Potatoes.
If you don’t have beef broth you can always use chicken broth. I have even made it with just water in the past, so this is a very versatile recipe.
As far as the onion in this recipe, if you don’t like onion, you can leave it out. Also, play with any of the spices to your liking.
🍽️HOW TO MAKE
This dish is super simple since it is made in a crock pot, but there is a little bit of prep. It’s simple and just makes the dish better.
PREPARATIONS
I usually brown my sausage and onion in bacon drippings on top of the stove before putting them in the crock pot. You don’t have to do this, but I feel like it adds great flavor to the sausage and onions.
If you are using fresh garden beans, be sure to wash them, remove strings as best you can, and snap them. If you are using canned or frozen, you won’t need to do anything.
COOKING INSTRUCTIONS
This is where crock pot recipes come in so handy; once all the prep is done, you just throw everything in the pot and let it do the work!
We used a 3-quart crock pot, but you can use a 4-quart it will still cook just fine. You just want to put it in a pot that it will fit in.
Cook in crock pot on low for 5 to 6 hours or high for 4 hours or until the potatoes are done.

Do not continue to take the top off and on during the cooking process. Yes, you will want to stir it, and you can but don’t overdo it. The heat escapes from the pot and it has to reheat all over again, which prolongs the cooking process.

CAN I MAKE THIS ON THE TOP OF THE STOVE
Yes, you can make this on top of the stove, bring it to a boil, then turn it down to a simmer and cook until the potatoes and the beans are done. If you want to cook the beans way down like country green beans, then add the smoked sausage about 30 minutes before the cooking process is done.
WHAT MAKES CANNED GREEN BEANS TASTE BETTER
Seasoning is what makes green beans taste better. That can be spices, onion, beef broth and meat. We love to cook with ham and bacon to add flavor. Saving bacon drippings is for recipes like this.
🍴HOW TO STORE THIS DISH
This dish will keep in the refrigerator for a few days and I love to reheat it in the crock pot. Just add it back and turn it on warm and let it all heat up. I find that it heats it up well, and the potatoes and everything get warm.
I find that this dish doesn’t freeze that well because of the potatoes. They don’t hold up very well and honestly, we never have any left over. However, some have commented they freeze this dish all the time and it will keep for a few months.

Sausage, Green Beans and Potatoes
This crock pot recipe for sausage, green beans and potatoes is easy and delicious.
Servings: 8 servings
- 1 pound smoked sausage can use Polish sausage, turkey sausage, Andouille sausage, cut into slices
- 4 cups frozen green beans or fresh green beans or 2 15 ounce cans
- 1 14.5 ounce can beef broth
- 2 cups water
- 3 to 4 large potatoes peeled or unpeeled and cut up (can use russet or red potatoes)
- 1 large onion peeled and cut in rings
- 1 teaspoon minced garlic
- 1/2 teaspoon salt or to taste
- 1/2 teaspoon black pepper
- 2 teaspoons bacon drippings Optional

Combine all ingredients and place in 3 quart crock pot or a pan on top of the stove.

Cook in crock pot on low for 5 to 6 hours or high for 4 hours or until the potatoes are done.

If making on stove cook until potatoes are done about 45 minutes to an hour. Makes 6 to 8 servings.
