Easy Mexican Rice - The Southern Lady Cooks

This Easy Mexican Rice is the perfect addition to taco Tuesday! Super simple side dish, reheats well and is always a great addition to any Mexican inspired meal. My family loves Mexican food and this easy rice recipe has quickly become a family favorite. Takes nothing to make and is delicious!

Easy Mexican Rice Ingredients Needed:

Long-grain White Rice

Cooking Oil

Onion

Minced Garlic

Chicken Broth

Tomato Sauce or Salsa

Cumin

Chili Powder

Salt and pepper

Fresh or dried cilantro (optional)

  • 1 cup long-grain white rice
  • 1/4 cup cooking oil
  • 1/3 to 1/2 cup onion chopped
  • 1 teaspoon minced garlic
  • 1 (14.5 ounce) can chicken broth or about 2 cups
  • 1 (8 ounce) can tomato sauce or 1 cup salsa (can use 1/2 cup tomato sauce and 1/2 cup salsa)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Dried or fresh cilantro optional
  • Rinse rice several times and drain. Heat oil in skillet on top of the stove. Add rinsed rice, onions and garlic. Cook until rice is browned stirring often.

  • Stir in chicken broth, tomato sauce or salsa, cumin and chili powder. Bring to boil and turn down to simmer. Cover and let cook about 25 minutes or until rice soaks up wet ingredients.

  • Remove and fluff the rice with a fork. Add salt and pepper to taste. Can garnish with cilantro. Makes 4 to 6 servings.
