❤️WHY WE LOVE THIS RECIPE

Biscuits are so important to our family! We have over 40 biscuit recipes on this site, and one old-fashioned recipe has been in our family for three generations! So, we really like biscuits. These cottage cheese biscuits are simple! They take very little time to assemble and bake, for only 15 minutes. The fact that they are made with cottage cheese makes them better. I know I always have cottage cheese in the refrigerator that needs to be used before it spoils. This is the perfect recipe for that.

🍴KEY INGREDIENTS

  • All-purpose flour
  • Baking powder
  • Baking soda
  • Salt
  • Cayenne 
  • Celery seeds
  • Cold butter, shredded or cut into small pieces
  • Small curd cottage cheese
  • Buttermilk

SWAPS

You can use regular or low-fat cottage cheese. I don’t suggest using nonfat cottage cheese.

🥣HOW TO MAKE

Step 1: Whisk together flour, baking powder, baking soda, salt, cayenne, and celery seeds in a large bowl.  Cut butter into flour until it resembles coarse crumbs.  We just use a spoon to do this. Mix in the cottage cheese and buttermilk to form a ball.

Step 2: Turn out on a floured surface, knead a few times, and cut out with a biscuit cutter. (We just use a glass to cut them out).

Step 3: Place biscuits touching on an ungreased baking sheet. Bake in a preheated 425-degree oven for 15 to 20 minutes.  You can brush biscuit tops with melted butter before cooking.

TIP

When making biscuits, remember that all flours are a bit different, which means making dough won’t be exact. You may need to add more flour to your dough to make it workable. That is OK. Your dough should not be sticky; if it is, add more flour until you reach a workable dough.

RECIPE VARIATIONS

You can always add different herbs and spices to any biscuits. Add dried parsley, chives, etc. Add shredded cheddar cheese, Colby cheese, cooked bacon, or ham.

You are more than likely handling your dough too much. Remember, you aren’t making bread. The less you can handle the dough the better. Also, make sure when you bake them they are touching. This way they rise UP against each other, not out therefore making them flat.

Can you taste the cottage cheese in these biscuits?

No, you can’t taste the cottage cheese.

STORING AND REHEATING
