  • 4 cups waxy variety potatoes cubed into 1/2-1/4 inch pieces
  • 6 tablespoons salted butter
  • 1 large yellow onion finely diced
  • 1 tablespoon minced garlic
  • 4 cups corned beef chopped into 1/2-1/4 inch cubes
  • Salt and pepper to taste
  • Parsley optional, for garnish
