Ingredients

The ingredients list for this recipe reads like a chocolate chip cookie recipe: super simple. You probably have most, if not all, the ingredients in your pantry right now. For the full ingredients list hop down to the recipe card at the bottom of the post.

  • Butter. I use salted butter in this recipe, but you can also use unsalted if you prefer.
  • Large eggs. I always use large eggs in my baking recipes unless otherwise noted.
  • Sugar. You will use a combo of light brown sugar and granulated sugar i this recipe.
  • Vanilla Extract. I prefer to always use pure vanilla, but feel free to use vanilla bean paste or imitation vanilla if that’s what you have.
  • Dry Ingredients: Baking Soda, Kosher Salt, and All Purpose Flour
  • Add-Ins/Toppings: Chocolate Chips, Mini Marshmallows, M&Ms, and Peanut Butter Cups

How to Make Your Cookie Pizza

This cookie pizza recipe is so simple, even easier than baking regular chocolate chip cookies, I’d say because you don’t have to worry about batches. One large cookie coming at you!

I won’t bore you with all the details because I imagine most of you have made cookies a time or two and all this cookie pizza entails is cookie dough pressed into a pizza pan! The full recipe is in the in the recipe card at the bottom of this post.

I use a large, nonstick pizza pan to press the dough onto. I also line it with parchment paper for ease of clean up, but if you’re using a nonstick pan you really don’t have to, it’s a personal preference.

You can honestly make the cookie pizza as thick or thin as you want it to be, but I used a 16- inch pizza pan like THIS ONE. Since the pan doesn’t have sides the “pizza” will spread a little bit as it bakes so leave an inch or two at the edge of the pan to give it some room!

You will bake the cookie pizza almost fully, and when you have about 2 – 3 minutes remaining, remove it from the oven and sprinkle the marshmallows all over the top. Leave the edge without marshmallows to create a cookie crust! Pop it back in the oven for 2 – 3 more minute until the marshmallows are puffed but not golden. The marshmallows mimc the cheese on a traditional pizza. Fun, right?

Once the marshmallows are puffed, remove the cookie pizza from the oven and sprinkle on  whatever toppings you like! I used M&Ms, chopped Reese’s peanut butter cups, and some Sno Caps!

Allow the pizza to cool before serving and then cut into slices and serve! This is such a great dessert for a party because you can cut the slices ahead and serve them on the pan, or allow everyone to cut their own slice!

Topping Ideas

The beauty of this recipe, like any pizza recipe, is that you can top it however you would like! From a plain “pie” to a full candy-lover dream, get as creative as you would like! Here are a few ideas that I love:

  • M&Ms or any candy coated chocolate candies
  • Peanut Butter Cups
  • Reese’s Pieces
  • Sno Caps (mini non pareiils)
  • Sprinkles
  • Chopped Kit Kats
  • Chopped Snickers, Milky Way, Twix
  • Chopped peanuts
  • Caramel drizzle

Variations

The great thing about this recipe are the options. You can make this cookie pizza in a variety of ways. Here are some other fun ideas:

  • Skip the marshmallows. Allow the cookie cake to cool completely and then top with a buttercream or cream cheese frosting.
  • Serve it plain and serve each slice with a scoop of ice cream.
  • Top with sliced strawberries and a chocoalte drizzle for the full chocolate covered strawberry effect.
  • Use any type of cookie dough as your base. You don’t have to stick to chocolate chip cookie dough. Try my sugar cookie dough as another option and top with fresh fruit to create a Fruit Pizza.

Description

This cookie pizza is perfect for game day, parties, or for a sweet treat for your family. It’s especially great because it’s easy and feeds a crowd!

  • 1 cup salted butter, at room temperature
  • 1/2 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 1/4 cups all purpose flour
  • 3 cups semi-sweet chocolate chips
  • 2 cups mini marshmallows
  • Toppings: Any candy you like. I used chopped Reese’s Cups, M&M’s and Sno-Caps

  1. Preheat to 350°F. Line a 16- inch round pizza pan with parchment paper* (cut into a circle). Set aside.
  2. In the bowl of your stand mixer fitted with the paddle attachment, mix the butter, light brown sugar, and granulated sugar together for 2 minutes on medium speed.
  3. Add in the vanilla, eggs, baking soda, and salt and mix for 1 minute, scraping the sides of the bowl as necessary. Turn the mixer to low and slowly add in the flour, mixing until just combined.
  4. Stir in the chocolate chips and press into the prepared pan, leaving about an inch at the edge of the pan to allow for spreading. Bake for 15 – 17 minutes, until the edges are just set and the top is only slightly glossy.
  5. Remove the pan from the oven and evenly sprinkle on the marshmallows. Return the cookie back to the oven and bake for an additional 3 minutes, or until the marshmallows are puffed, but not toasted.
  6. Remove the pan from the oven and place on a wire rack to cool. Immediately sprinkle on your preferred toppings. Allow the cookie pizza to cool completely before slicing and serving.

Notes

*If you are using a nonstick pizza pan, you don’t have to use parchment paper, but it makes for easy clean up!

Store airtight at room temperature for up to 5 days.
