It’s just a few simple ingredients, and it’s so good. It’s a snacking cake, meaning it’s made in an 8X8 and great when you don’t need a large dessert.
Ingredients Needed for a Busy Day Cake:
Butter, softened
Brown Sugar
Buttermilk
Baking Soda
All-Purpose Flour
Vanilla Extract
Topping Ingredients:
Butter, softened
Brown Sugar
Milk
Shredded Sweetened Coconut
Vanilla Extract
Pecans
Recipe Notes:
- You can certainly leave the frosting off of this cake and dust it with powdered sugar or whipped cream. However, I think it’s way better with the frosting.
- You could easily use walnuts instead of pecans in the frosting.
- You could probably double this dessert easily. However, you’ll need to watch the baking time.

Busy Day Cake
This cake is so simple! It doesn’t even require any eggs. It will become a family favorite!
Servings: 8 servings
- 1/4 cup butter softened
- 1 cup brown sugar
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 1/2 cups all-purpose flour
- 1 teaspoon vanilla extract
Topping Ingredients
- 3 tablespoons butter softened
- 1/2 cup brown sugar
- 2 tablespoons milk
- 1/2 cup shredded sweetened coconut
- 1 teaspoon vanilla extract
- 1/2 cup pecans
Cake Instructions:

Cream butter and sugar with a mixer. Add in buttermilk and vanilla extract. Whisk together baking soda and flour and add to the other ingredients. Continue mixing until all ingredients are wet.

Spray a 8 x 8 baking pan and add batter. Bake in a preheated 375- degree oven for 30 minutes or until center tests done. Add topping while the cake is still warm.
Topping Instructions:

Mix soft butter, sugar, and milk with a spoon. Add coconut and vanilla extract. Spread over cake. Sprinkle on pecans. Place the cake under the broiler for about one minute or until the topping is bubbling.
