This Black-Eyed Pea Chili is a dish your family will absolutely love. We made this chili a little different, we added breakfast sausage and oh my.. it is delicious! This is the perfect chili to make for your New Years Day celebration. It’s good luck to have black-eye peas on New Years Day and this hearty dish is a winner!
Black-Eyed Pea Chili Ingredients Needed:
Green Pepper
Can of Rotel Tomatoes with Green Chilis
White or Yellow Onion
Breakfast Pork Sausage
Minced Garlic
Frozen Black-Eyed Peas
Tomato Sauce
Beef Broth
Smoked Paprika
Chili Powder
Ground Cumin
This recipe is so easy and definitely hits the spot on a cold day! Now if you like spicy chili, you can always use hot Rotel tomatoes and spicy pork sausage. That is a great way to add some heat! Personally we like it the way it’s written but recipes are versatile for a reason. I like making this with the frozen black-eyed peas because the canned ones are much thicker, but you could use those.
This dish is wonderful topped with cheese and sour cream and crumbled saltine crackers. This chili would also be a great addition to any large gathering as you can easily double the recipe.
If you are not a fan of Rotel Tomatoes you can easily just add a can of diced tomatoes.

Black-Eyed Pea Chili
This Black-Eyed Pea Chili is a hearty dish your family will love!
- 1 green pepper chopped
- 1 can of rotels drained
- 1/2 cup of chopped onion
- 1 teaspoon of minced garlic
- 1 lb breakfast sausage
- 2 cups of frozen black-eyed peas
- 1 15 ounce can of tomato sauce
- 1 cup of beef broth
- 1 teaspoon smoked paprika
- 1 1/2 teaspoons of chili powder
- 1 teaspoon of ground cumin

In a skillet, cook breakfast sausage, onion and green pepper and minced garlic until sausage is no longer brown. Drain any grease.

Combine sausage mixture and rest of ingredients in a 4 quart crock pot let cook for 4-6 hours on low.

Serve with sour cream, cheese and saltine crackers.
