Tender bites of barbecue chicken, stuffed into a fluffy baked potato with a perfectly crispy skin make these Stuffed Baked Potatoes a perfect meal.
While visiting my sister Jenny several years ago, she made these BBQ Chicken Stuffed Potatoes for us. Perfectly simple, filling, and as easy as you can imagine, we ate them with enthusiasm. I knew right away that I’d be adding BBQ Chicken to my list of stuffed potato recipes to make.
Little did I know that this would rapidly become one of our family’s favorite meals.
Whether it’s a last-minute use for leftover chicken, or the reason we swing by Costco to pick up a rotisserie chicken for dinner, these BBQ Chicken Stuffed Potatoes are a meal we happily eat at least a couple of times a month.
Perfect Baked Potatoes
First, let’s talk about these potatoes. These are PERFECT baked potatoes.
I’ve learned over the years that all baked potatoes are not created equal. I’ve had baked potatoes that knocked my socks off and baked potatoes that left something to be desired. These stuffed baked potatoes are definitely the former.
The crispy skin and fluffy potato inside will have you enjoying each and every bite. All you need is a drizzle of oil and a pinch of salt. Let the potatoes roast while you read a book or take a nap.
When you’re ready to eat, warm the chicken with your favorite BBQ sauce, split those potatoes open, pile the saucy chicken onto them, and dig in. Once the potato is gone you’ll end up scraping your bite to get every last bit of barbecue flavor.
Serve the meal on paper plates like you’re at a real barbecue and you’ll have almost nothing to clean up. (How great does THAT sound?)
Stuffed Baked Potatoes
This meal is made so easy by the fact that everything aside from the potatoes is ready to eat.
For an ultra-fast and easy meal, use store-bought barbecue sauce and pick up a ready-made grocery store rotisserie chicken. I’ve made BBQ Chicken Stuffed Potatoes plenty of times that way and it’s delicious every time.
This recipe also tastes incredible with homemade barbecue sauce. Sweet and Spicy Homemade Barbecue Sauce and Tangy Memphis BBQ Sauce are some of my favorites to use in this recipe.
Whipping up a batch of homemade sauce is well worth it since you can store it in the fridge and use it in tons of different recipes. Make the sauce in advance to save yourself time (and dishes) the day you’re baking your potatoes.
The same goes for the chicken. BBQ Chicken Stuffed Potatoes are always at the top of my list for ways to use up leftover chicken. Slow cooked, baked or pan-fried chicken leftovers are all delicious warmed with barbecue sauce and then stuffed into perfect baked potatoes.
As I mentioned before, sometimes we also stop and pick-up a Costco rotisserie chicken when the craving for Chicken BBQ Stuffed Potatoes strikes. I use the meat in this recipe, then save the bones and extras for Homemade Chicken Stock so nothing goes to waste.
The potatoes are delicious served with just the bbq chicken, but my family likes to add classic baked potato fixings on top too.
Cheese, sour cream and chives are fabulous additions along with an extra side of sauce for those who can’t get enough barbecue goodness.
Chicken Stuffed Baked Potatoes
- Preheat the oven to 350 degrees. Scrub the potatoes to remove all dirt and then rinse and dry thoroughly. Poke several holes into each potato with a fork and then place them on a baking sheet. Drizzle the potatoes lightly with oil. Generously sprinkle each potato with salt and then place in the oven. Bake for just over an hour, until fork tender. They should be crisp on the outside and tender inside.
- When the potatoes are almost finished baking, place the cooked and chopped chicken in a medium-size saucepan and cover with barbecue sauce. Stir gently to combine and warm over low heat until steaming hot, this should take less than 10 minutes. Add more sauce as desired, until the chicken is as saucy as you like.
- When the potatoes are finished, remove from the oven and slice each one down the center and fluff with a fork. Top each potato with the barbecue chicken mixture. For ease of serving, you can also simply chop a baked potato onto a plate and top with the chicken. Garnish with cheese, sour cream and chives as desired.
When I tell you BBQ Chicken Stuffed Potatoes are one of my favorite meals, I’m not kidding. It’s almost too simple to be as tasty as it is. I will owe my sister Jenny for this recipe for a long time.
