Apricot preserves
Honey
Onion

fresh chopped parsley for garnish, Optional
Notes: The recipe makes a great weeknight dinner but it’s also wonderful to serve for any small gathering. Add our onion soup potatoes and you’re set.

Apricot Honey Pork Loin
This recipe for Apricot Honey Pork Loin great dish for dinner!
Servings: 8 servings
- 1 2 to 3 pound pork loin
- 3 tablespoons cooking oil I use Canola
- 1/3 cup apricot preserves
- 1/4 cup honey
- 1/2 cup chopped onion can use regular or green onions
- 1 teaspoon salt
- 1/2 cup orange juice
- 1 tablespoon spicy brown mustard or mustard of your choice
- 1 teaspoon minced garlic
- 1/2 teaspoon black pepper
- 1 teaspoon soy sauce
- fresh chopped parsley for garnish Optional

Slice pork loin crosswise in 1/4 to 1/2 inch slices. Brown slices on both sides in oil on top of the stove. Whisk together remaining ingredients in a bowl. Place browned pork loin slices in a casserole dish and pour apricot and honey mixture over the slices.

Cover with foil and bake in preheated 375 degree oven for 35 to 40 minutes. Can add chopped fresh parsley before serving. Makes approximately 8 servings depending on the size of your pork loin. Great served over rice or can serve with mashed potatoes.
