Grilled Red Potatoes are a great side dish for your next backyard barbecue.
This is an easy summer recipe with tender potatoes tossed with onion, butter, and a few seasonings. They’re cooked until golden grill (or in bake them in the oven if you’d prefer).
Serve this red potatoes recipe next to chicken breasts, grilled steaks, or even burgers.
Here’s Why We LOVE These Potatoes!
While mashed potatoes or roasted potatoes are the perfect comfort foods in cooler months, these spuds are great for warmer months since the cooking can be done outdoors!
- Just a few ingredients that you likely have on hand already!
- They come together quickly with little prep plus clean up is a breeze.
- A big packet of potatoes is budget friendly and tastes so good!
- A little shortcut (pop them in the microwave a few minutes) makes the grilling time fast.
- They’re great next almost any summer meal from steaks, to BBQ chicken or even grilled salmon.
Ingredients
Red Potatoes – Use chopped whole red potatoes or baby red potatoes. They’re both thin-skinned and require no peeling.
Other options:
- Fingerling Potatoes, which are long and narrow potatoes are also delicious grilled.
- Thin Skinned Potatoes such as Yukon gold or white potatoes work well. Just cut into chunks. Baby potatoes (aka new potatoes) can have either red or white skins and can be used. They are harvested before fully developed, which makes them sweeter than their larger “adult” version.
Additions – We love onion and garlic for flavor and a bit of fresh rosemary. Butter adds great flavor but olive oil can be used as well! Add a generous sprinkle of kosher salt & black pepper.
Variations
- Swap out the garlic for ½ teaspoon garlic powder or add in your favorites spices from Italian seasoning, oregano, chives or any spice mix you love.
- Crisp cooked bacon can be added (bonus, toss the potatoes in bacon fat instead of butter).
- Once cooked, open the foil and top the potatoes with cheese. Let rest a few minutes to melt.
How to Grill Red Potatoes
Cooking potatoes on the grill is a snap. Prep work is minimal since you don’t even have to peel them.
- Wash the potatoes and chop into bite sized pieces (per the recipe below).
- Place potatoes in a large bowl and microwave for a few minutes (or boil if you’d prefer) until they’re almost tender.
- Wrap in foil with butter and seasonings.
- Place the foil pack on the grill and cook until the potatoes are browned and the onion has softened.
Garnish with green onions or chives!
Tips for Perfect Potatoes
- Cook the potatoes part way by placing in the microwave or boiling just until fork tender. This keeps the grill time short.
- Use heavy duty foil for the best results.
- Other vegetables can be added to the mixture.
- Potatoes can be skewered and cooked directly on the grill over indirect heat if you’d prefer. If using wood skewers, be sure to soak in water for 30 minutes before grilling.
- This potato foil packet recipe can also be cooked in the oven at 400°F. Bake for about 30 minutes.
- Garnish with parsley and serve with sour cream or homemade ranch for dipping.
