Welcome to the weekend, my friends! My mom is in town this weekend and I’m looking forward to having brunch with friends and then spending some time in the kitchen working on a few recipes. As much as I love a cup of soup and a terrific grilled cheese, I’m just about ready for spring and summer foods. Bring on all the fruits and vegetables, please!

ON THE BLOG this week: I was so excited when I learned how to make restaurant-style whipped butter at home years ago. Whipped butter is ultra-easy to make but feels extra special every time I serve it.

My mind has been blown by this slow-cooker granola. Homemade granola made in the slow cooker is so easy, I made two different batches yesterday! This is something special.

I love cheesecake and I love ice cream; so Cheesecake Ice Cream calls my name. It really does taste just like cheesecake frozen into perfectly scoopable bites of ice cream.

This Blueberry Oatmeal is currently my youngest son’s favorite breakfast. It is loaded with blueberries that plump up when cooked and burst with flavor in each bite.

What I’m CRAVING: This Shrimp Louie Salad by Foodness Gracious looks absolutely fantastic. The salad is filled with avocado, hard-boiled eggs, tomato, and shrimp then tossed with a tangy dressing. What’s not to love? 

What I’m READING: Betsy was a Junior / Betsy and Joe by Maud Hart Lovelace. Next up in the Betsy-Tacy series are the Junior and Senior years for Betsy. I love these books so much for the way they’re written. It feels like you’re right there with Betsy and her friends and family. These books have brought me so much joy through childhood and again now, as I’m enjoying them again on the Kindle.
