As with so many recipes, this one was inspired by the ingredients already in the kitchen. A bunch of very ripe bananas met my son’s request for waffles.

I played with our Buttermilk Waffle recipe a bit and the happy result is a beautifully crisp waffle that is almost unbelievably light and fluffy inside with plenty of banana flavor.

I am so giddy over these banana waffles that I made them twice this week, just to make sure they were as perfect as I remembered. And yes, they really are amazing. 

On their own, or topped with Buttermilk Syrup, Waffle Sauce, Brown Sugar Butter Syrup, peanut butter, whipped cream, or good old maple syrup, these Banana Waffles are a great idea any day of the week.

Banana Waffle Recipe

  1. Preheat your waffle iron. Combine the bananas, eggs, buttermilk, vanilla, and brown sugar in a bowl and whisk until smooth. (You can also combine in a blender and pulse smooth.)
  2. Combine the flour, baking powder, baking soda, salt, and nutmeg in a mixing bowl and whisk to combine. Add the wet ingredients and stir until well mixed. Stir in the melted butter.
  3. Pour batter onto the hot waffle iron and cook until crisp and browned. Serve with the toppings of your choice.
