Welcome to the weekend, my friends! We’re hosting brunch with friends today and I’m looking forward to it. Are you a fan of sweet or savory breakfasts? It’s always hard to choose between classic Waffles with my grandmother’s Waffle Sauce and Cheddar Chive Waffles with Rosemary Gravy. At the moment, I’m leaning savory for today.
ON THE BLOG this week: Cheesy Bacon Biscuits are a terrific addition to any meal and this easy drop biscuit recipe comes together in just minutes.
Fresh cucumbers, tomatoes, and basil are drizzled with a simple balsamic and oil dressing to make this simple Cucumber Tomato Salad. I could happily eat this every day,
Tender bites of barbecue chicken, stuffed into a fluffy baked potato with a perfectly crispy skin make these Stuffed Baked Potatoes a perfect meal.
Honey Balsamic Vinaigrette is sweet and tangy and while it is delicious on almost any salad, it pairs especially well with salads that contain fruit. I’ve been making it on repeat with this Blueberry Apple Walnut Salad.
Dried cranberries, white chocolate chips, and old-fashioned oats add up to these Cranberry White Chocolate Oatmeal Cookies. This is Sean and Ben’s favorite cookie of all time. (No worries if you aren’t a fan of white chocolate? Just swap in dark or semi-sweet chocolate chips for a tasty alternative. We love them both ways.)
What I’m CRAVING: This Grilled Pineapple with Spiced Rum Butter Sauce from Claudia’s Table caught my eye yesterday and I’m still thinking about it. It sounds pretty amazing.
My FAVORITE THING this week is my mechanical pencil. I’m fairly certain I’ve told you about the Pentel Graphgear pencils before, but on the advice of a reviewer the other day (when I was buying an extra pencil to keep in my purse) I purchased it in a .5mm lead instead of my usual .7mm. This turned out to be a writing game changer. The lead stays super crisp, barely wears down, and writes so very smooth and clean. I’ve loved these pencils for years, but now? I love it even more with the smaller lead size. Who knew it would make that big a difference?
What I’m READING: Till We Have Faces by C.S. Lewis. This is Lewis’ reimagining of the story of Cupid and Psyche. Told from the perspective of Psyche’s sister, Orual: “I saw well why the gods do not speak to us openly, nor let us answer . . . Why should they hear the babble that we think we mean? How can they meet us face to face till we have faces?”
I didn’t know quite what to expect going into this book and it was so much better than I imagined. Even though it is a very different style of writing than my usual reading, it was engrossing. I found it to be both a slow and a fascinating read.
All of that said, I’m ready for some fluffy bubble gum reads for a bit. Does anyone have a great fiction book suggestion for me? Murder mysteries? Sweet romance? Historical fiction? I’m thinking about reading through some childhood favorites this summer while on our road trip. Send me your favorites!
What I’m WATCHING: Lost. The kids and I finished the first season a few days ago, complete with dropped jaws and mumbling of numbers all in a row. I am still grinning to remember how all-in they are in the series, just like I was ten years ago. It’s been a lot of fun introducing them to the show and I’m looking forward to starting season two this weekend.
“When you lie down, you will not be afraid; when you lie down, your sleep will be sweet.” Proverbs 3:24 NIV
Wishing you a beautiful week full of little things that make you smile!
