Welcome to the weekend, my friends! Are you enjoying this cold weather? I don’t think it matters where you live if you’re in the US right now, everyone seems to be getting hit with it on some level. We’re snowed in this weekend – not to be confused with the snow we had last week and the week before that.
I finally understand the joy of anticipating spring sunshine and the happiness of warmer days to come. I still love the winter and even these snowy days, but I sure am looking forward to sunshine and warm afternoons spent on the porch.
ON THE BLOG this week: Cafe con Leche is a creamy hot coffee drink typically made with espresso and milk. While I enjoy mine lightly sweetened, many people prefer it unsweetened. It’s easier to make than you might think and you don’t need a fancy countertop espresso machine to make it.
Tender, juicy Pork Medallions are served with a creamy wine sauce to create a mouthwatering meal. This whole recipe comes together in just about 20 minutes! Pan-frying pork medallions are a terrific way to cook pork tenderloin. It only takes a minute and the meat turns out juicy and delicious every single time.
What I’m CRAVING: These amazing Peanut Butter Cookies. (I just made another batch this week. I LOVE them!) This recipe has been a huge reader favorite from The Weeknight Dessert Cookbook. And lucky for you today, my friend Kathryn shared the recipe on her website a while back and I can link to it here for you.
My FAVORITE THINGS this week are these inexpensive ring sizers. They’re absolutely brilliant! A couple of my rings have been spinning on my fingers and these very simple ring sizers have solved that. (They are such a great price too at just $8! There are enough bands here to size at least a dozen or more different rings.) I barely notice the sizer is on the band and the rings are very comfortable. I highly recommend them if you have a ring that is slightly too big and you don’t want to permanently resize the ring.
What I’m READING: The Wish by Nicholas Sparks. I’ve been a fan of Nicholas Sparks ever since I read The Notebook. That book will forever be my favorite of his work. It is simply wonderful.
While his books are almost always predictable and crazy tearjerkers too, somehow I keep reading them. This was no different. I enjoyed it, but I was emotionally exhausted by the time I finished it. There’s a reason I will go years between picking up one of his books. There’s always a great deal of emotion written into those pages.
All of that said? This wasn’t my favorite of his books, it was definitely the most predictable one I’ve read, AND (even though I am not a fan of spoilers) I’m going to add that it’s a cancer story. Personally, if I’d known that ahead of time, I might not have picked this one up.
What I’m WATCHING: Ben Hur. I introduced my boys to this one during one of our recent snow days. Are you a fan of the original movie? Sometimes, you just have to watch the older movies and I’ve enjoyed several old movies recently.
I just learned that Ben Hur was remade a few years ago – have you seen the new one? If so, do you recommend it?
What I’m LISTENING to: The Willoughbys by Lois Lowry. This is nothing like the other Lois Lowry books I’ve read, but we’re enjoying listening to it. It’s definitely a read (or a listen) for older kids. All three of my boys are into this one and they’re big fans of dark humor. It’s reminiscent of Lemony Snicket and maybe some Roald Dahl along with that.
